Kale Salad with Candied Pecans and Cranberries
A bright holiday kale salad with maple candied pecans, dried cranberries, Parmesan and apple cider vinaigrette. Ready in 30 minutes and serves 6.
A salad at Christmas can feel like a small break from all the rich food, and this one is my favorite. Kale stays crisp for hours, so it is fine on a buffet. The sweet pecans and cranberries make it feel like a holiday dish.
Saúl’s Tip
Massage the kale with a little dressing for a minute or two with your hands. It softens the tough leaves and takes away the bitter edge.
Tips for Success
- Remove the thick stems, which are tough and bitter.
- Cool the pecans fully before adding them.
- Start with two-thirds of the dressing. You can always add more.
- Shave Parmesan with a vegetable peeler for wide, thin curls.
Make-Ahead and Storage
Candy the pecans up to 3 days ahead and store airtight. Make the dressing up to 5 days ahead; whisk again before using. The dressed salad keeps 1 day in the fridge.
Variations
- Add thin slices of crisp apple or pear.
- Use toasted walnuts or almonds.
- Swap Parmesan for crumbled goat cheese.

Ingredients
Instructions
- Heat the oven to 350°F. Line a small rimmed baking sheet with parchment paper.
- Toss the pecans with 2 tbsp maple syrup and 1/4 tsp salt, and spread them in a single layer on the sheet.
- Bake for 10 to 12 minutes, stirring once halfway, until the pecans are golden and glazed. Watch them closely at the end, because the sugar burns fast.
- Slide the parchment onto a wire rack and let the pecans cool completely. They crisp as they cool.
- Tear the kale leaves into pieces about 1 1/2 inches across and put them in a large bowl.
- Add 1/2 tsp salt and the lemon juice. Massage the kale with your hands for 1 to 2 minutes, until the leaves darken, shrink and feel softer.
- For the dressing, whisk the vinegar, mustard, 1 tbsp maple syrup, garlic, 1/4 tsp salt and pepper in a bowl. Slowly drizzle in the olive oil while whisking until creamy.
- Toss the kale with about two-thirds of the dressing and let it sit at room temperature for 10 minutes.
- Just before serving, add the cranberries and break the pecans into clusters. Toss, and add more dressing if the salad looks dry.
- Top with Parmesan and pomegranate arils, then taste for salt and serve.
Frequently Asked Questions
Do I have to massage kale for a salad?
Yes, it makes a big difference. Rubbing the leaves with salt and lemon breaks down the tough fibers, making the kale tender and less bitter.
Can I make this kale salad ahead?
Dress the kale up to 4 hours ahead; it stays firm. Add the pecans and cranberries right before serving so the pecans stay crisp.
What kind of kale is best for salad?
Lacinato (Tuscan or dinosaur) kale is flat and tender. Curly kale works too, but massage it a bit longer.
